We eat a lot of eggs each week. It is not unusual for us to go through four dozen. We love to buy them at the Saturday market from Orval Zehr (who looks like my Dad). Chloe is the most egg crazy in the house and it is usually around 9pm when she asks for her bedtime snack of two fried eggs. (Yes, 9pm is too late for her to be getting a snack and yes, it is ridiculous the we prepare this for her most nights.)

In our house, we love our eggs 3 ways. Here is how we prepare them…

Fried Eggs

We like them over medium. I prefer to cook them in a decent whack of unsalted butter but if we’re feeling more health conscious I use cooking spray.  I cook them on medium-high heat with a good amount of salt and pepper. Once I flip them, I turn the heat off and let them sit, still on the burner, to cook without direct heat. They are always served on buttered toast; Chloe likes hers with jam as well.

Scrambled Eggs

I changed how I cook my scrambled eggs after watching a cooking show – I can’t recall which one. I used to whip the eggs with milk or cream. Now, I heat my pan with lots of butter (I never use cooking spray with my scrambled eggs!) and thoroughly whip up just the eggs, add a good amount salt and pepper to the eggs in the pan and try not to overcook.

Soft Boiled Eggs for Eggs and Soldiers

I had never eaten a soft boiled egg with toast in my life until I watched the movie Call Me by Your Name (an excellent movie!).

Every morning, somewhere in the Italian Riviera, the family dines outdoors and soft boiled eggs are the star of the table. I made them for us right after watching the movie and we have been hooked ever since!  We prefer to use white bread from a bakery and I don’t hold back on the butter.

Bring water to a boil in a pot. Carefully drop in 4-6 eggs (best if they are room temperature but I never remember to do take them out). Turn heat to low, cover and cook for about 6 minutes. I have to admit I have not fully mastered the timing on this. I usually take out one egg and test it to determine if the rest need more cooking time. And that usually means only one more minute at the most. Put eggs in cold water right away.

Use a sharp knife to crack the top off and add salt and pepper. I like to add more with every bite…
