My friend Mick is a writer, director and baker extraordinaire. Whenever he is need of creative inspiration, he bakes. And he often bakes a chocolate cake. I always hope to happen by their house on such days. I was so desperate for a piece the other night that I texted to inquire if there was a cake on the counter. To my dismay, he had not been in the kitchen. I decided to take matters into my own hands and bake it myself. It is so simple and so delicious.

I am going to share it with you, exactly as he shared it with me. He cracks me up.  You will be so happy you tried this. Enjoy!

Mick’s Chocolate Cake

4 eggs
¾ cup flour
¼  cup cocoa
1 cup sugar
I cup softened butter (I used salted but it doesn’t matter)
2 tsp baking powder
A splash of milk
Whiz together, put in two pans, and bake at 350 degrees for about 25 minutes.

 

When cool, spread butter icing over bottom cake:

1 cup icing sugar, ½ cup of softened butter,  a couple of squares of melted chocolate. Whizz together.

For icing on top: 1 cup icing sugar, a couple of squares of melted chocolate and a splash of hot water. Whizz together and pour over.

Eat.

My first attempt was an esthetic fail. I just COULD NOT wait any longer for it to cool as I was so desperate to eat it! It took me three tries to get the masterpiece you see in the first two photos. Give it a try and tell me how it goes!
